WHERE TO EAT
Pisa is a fantastic place to enjoy Italian cuisine. As good Tuscans we also combine typical dishes with excellent wines. Pisan cuisine, like all Tuscan cuisine, is a poor cuisine that combines sea and land recipes, prefers simple dishes and finds an essential element in Tuscan bread (bread without salt).
Another ingredient that particularly characterizes Pisan cuisine is the truffle, particularly prized in this area.
Also not to be underestimated are the wines and olive oil, among the most renowned in Tuscany.
Among the dishes to try we mention the Zuppa Pisana (not to be confused with the Florentine Ribollita), the Stockfish with potatoes, the Tripe, the Mucco Pisano meat (beef steak raised only in Pisa) and the Torta co'bischeri.
The city is full of restaurants, trattorias, inns. Among the many possibilities we recommend a few.
